Experience

Dining Room Instructor
1989-present

Operate and manage a dining room staffed by students. Training students to appear, act and speak professionally in the dining room. Instruct various styles of dining service, wine appreciation, salesmanship in the dining room. Writing course objectives and lesson plans. Coordinating guest speakers.

Head Waiter and trainer
1987-present

Head Waiter in a formal dining room. Teach all employees about different products and cooking techniques for four different menus. Menus rotated every two weeks using IBM computer ordering system. Have taken extensive wine courses, and was responsible for selling a list of over 500 varietals.

Waiter-Floor Manager
1987-present

Floor manager two nights per week. Back-up bar manager, supervise employees, handle customer relations, ensure food service, control dining room flow, creative motivating of employees.

Dining Room Manager
1982-1986

Training personnel to work as a tem in all aspects of dining room techniques including table side preparation. Hiring, dismissals, budgeting, payroll, banquets, and customer relations. Received Department of the Year award in 1985 given by the Holiday Inn.

Room Division Manager
1981-1982

Worked directly with department managers in daily operation of front office. Supervised front desk, bellmen, PBX operators, night auditors and room reservations. Also coordinated house keeping and maintenance departments.
